Summer Salad

I was looking for a tasty salad recipe to take to tomorrow's BBQ and came across this one:

CORNED BEEF JELLO SALAD 

2 pkg. lemon gelatin (3 oz.)
2 1/2 c. boiling water
1 can corned beef, finely shredded
2 c. celery, chopped
3 tbsp. green pepper, chopped
3 tsp. onion, chopped
1 tsp. lemon juice
1/4 tsp. salt
1 c. salad dressing (not mayonnaise)
Grated carrot

Mix the lemon gelatin with the boiling water, let cool, but not harden. Mix in a separate bowl the corned beef, celery, green pepper, onion, lemon juice, salt and salad dressing. Combine the gelatin with the corned beef mixture and stir well. Pour into a greased pan and chill. Serve with grated carrot and a dash of mayonnaise if desired.

  1. I'd be willing to try it; you never know. I just got back from a week away from home, living at Harris Ranch where I ate a couple times. The plum sauce made with some kind of tequila on my pork chop and mashed potato cake was amazing, though it sounds wierd.
